Chestnuts and Sprouts


Serves 8


1 lb chestnuts

2 10 oz packages Brussels sprouts

3 Tbs unsalted butter

2 Tbs fresh thyme, chopped

salt and pepper to taste

6 thin bacon slices, cooked crisp


Cut crosses onto flat sides of chestnuts with a sharp knife. Drop into boiling water. Boil 15 minutes; remove skins.

Trim spouts; score each root end with and X.

Place chestnuts in vegetable steamer over boiling water. Steam 10 minutes. Add sprouts; steam 7-10 minutes until sprouts are tender.

To serve toss chestnuts and sprouts with butter, thyme, salt and pepper. Crumble bacon on top.
