4 Cornish game hens
¼ cup minced fresh cilantro
1 Tbs freshly ground black pepper
12 garlic cloves, minced
Cut hens in half lengthwise. In a small bowl, combine minced, fresh coriander, pepper, and minced garlic. Rub this mixture evenly over the hens.
Grill hens over a bed of hot coals, about six inches from the source of heat. Turn hens every five minutes for even browning, allowing 25 to 30 minutes total cooking time.
Arrange hens on a heated platter and serve with Thai Sauce.
Thai Sauce Ingredients:
2 red hot chili peppers, seeded and finely chopped
3 Tbs dark brown sugar
1 Tbs honey
2 12-inch stalks fresh lemon grass
1 Tbs fresh ginger, coarsely chopped
6 garlic cloves, minced
4 shallots, minced
¼ cup soy sauce
¼ cup fresh coriander (cilantro), minced
In a food processor or blender, combine all ingredients and process until smooth. Serve cold.
