Coriander (Cilantro) Butter


Makes about ¾ cup


2 garlic cloves, unpeeled

½ cup (1 stick) unsalted butter, softened to room temperature

½ cup fresh coriander (cilantro) leaves, minced

1 tsp fresh lemon juice


In a small saucepan, blanch garlic in boiling water for 10 minutes. Remove from water; cool and peel. Finely mince garlic.

In a small bowl, cream butter.

Add minced garlic, coriander and lemon juice. Pack butter into a small, covered container and refrigerate until ready to use.
