Makes 1 cup
1 cup (two sticks)butter
1 Tbs fresh lemon juice
2 cloves garlic, minced
3 Tbs fresh oregano, chopped
Fresh mussels, (eight to 12 per person)
Melt butter; stir in lemon juice, garlic and oregano.
Pour into a small heatproof container that can sit on the edge of the grill, above bed of hot coals.
Arrange mussels on grill.
Cook, turning once, until mussel’s pop open (about three minutes).
With tongs, drain mussel juices into butter.
Pluck out meat with a fork, dip in butter and enjoy!
