Baked Scalloped Potatoes with Sonoran Seasoning

Bake

Serves 4-6


Ingredients:

4-6 medium potatoes, peeled and sliced

2 Tbs unsalted butter, melted

Sonoran Seasoning, (recipe follows)


Preparation:

Preheat oven 425°.


Boil potato slices for 10 minutes, then drain and layer in a shallow baking pan and brush with melted butter.


Sprinkle generously with Sonora Seasoning and bake in a 425° oven for 25 minutes.


Sonoran Seasoning Makes 1 cup


Ingredients:

1 Tbs pure chili powder

1 Tbs freshly ground black pepper

1 Tbs cumin

3 Tbs fresh oregano, chopped

2 Tbs fresh thyme, chopped

5 Tbs fresh coriander (cilantro), chopped

1 small fresh jalapeño chili pepper

2 garlic cloves, minced


Preparation:

Combine all ingredients in a blender or food processor. Grind finely.


Store in a glass jar, tightly covered. Use within one week.
