Chicken with Tarragon


Serves 6-8


2 small broiling chickens, cut up or halved


Salt and pepper to taste

1-2 cloves garlic, finely chopped

2-3 Tbs fresh tarragon

½ cup dry, white wine


Preheat oven to 375°.

Place chickens in baking pan. Baste with melted butter, season with salt, pepper and chopped garlic. Sprinkle generously with tarragon leaves.

Place in preheated oven and roast 45 minutes or until done.

Warm the wine in a small saucepan and baste the chicken after 15 minutes. Continue to baste frequently.
