¼ cup fresh lemon verbena or lemon balm leaves
¼ cup fresh dill, minced
¼ cup fresh savory or oregano, minced
½ cup fresh Italian, flat leaved parsley, minced
1 head garlic, chopped
¼ cup extra-virgin olive oil
4 lbs clean calamari cut in ½" wide rings
Crushed red pepper and freshly ground black pepper to taste
Preheat oven to 375°.
Mix all herbs, including garlic and oil together in a mixing bowl.
Wash and drain calamari and spread in a large baking dish.
Pour herb mixture over the calamari and stir well, so that all the calamari has been thoroughly covered with herbs. Add pepper to taste.
Bake, covered, for 15 minutes.
Remove cover and stir.
Return uncovered dish to oven and cook for another 20 minutes.
