Goat Cheese Popovers


Makes 10 Popovers


2 eggs

1 cup unbleached all-purpose flour

¼ cup chopped fresh parsley

½ tsp salt

1 cup milk

2 Tbs butter, melted

4 oz goat cheese, cut into 10 pieces


Preheat oven to 425°.

Mix together eggs, flour, parsley, salt and milk.

Pour a little melted butter into 10 muffin cups or popover pans.

Fill the bottom of each cup with batter, about 1/3 full.

Place one piece of cheese in each cup.

Top with remaining batter, filling the cups 2/3 full.

Bake for 25-30 minutes, until puffed and browned.

Serve hot.
