Grill Serves 4
Ingredients:
¾ cup fresh basil leaves, tightly packed
1 Tbs parmesan cheese, grated
1 Tbs pine nuts, toasted
1 clove garlic, halved
¼ cup plain yogurt
4 boneless chicken breast halves
Preparation:
In a food processor, combine basil, cheese, nuts and garlic. Process until smooth. Add yogurt.Place chicken in a glass bowl and cover with basil mixture, turning to coat all sides. Chill 2 hours.Grill on a well-oiled rack over medium-hot coals until chicken is tender, about 5 minutes per side. Baste occasionally with marinade.
