6 loin lamb chops, cut 2" thick
⅓ cup extra-virgin olive oil
3 Tbs fresh sweet marjoram, chopped
2 Tbs fresh basil, chopped
2 cloves garlic, minced
3 Tbs dry white wine
1 Tbs white wine vinegar
Trim excess fat from chops.
In a shallow ceramic dish, combine oil, sweet marjoram, basil, garlic, wine and vinegar.
Place chops in marinade, turning to coat both sides. Let stand at room temperature 30 minutes, turning often.
Grill or broil under a preheated broiler for 7 to 8 minutes per side or to desired doneness, brushing with remaining marinade.
