Mushroom Thyme Gravy


Makes 4 Cups


6 cups chicken broth

2 carrots, finely chopped

1 onion, finely chopped

1 stalk celery, finely chopped

1 lb fresh shiitake mushrooms, cleaned and chopped

1 Tbs extra-virgin olive oil

⅔ cup dry white wine

1½ Tbs fresh thyme leaves

1 Tbs fresh parsley, chopped

salt and pepper to taste


Bring broth to a boil. Add carrots, onion, and celery. Simmer 10 minutes. Remove vegetables; set aside. Reduce broth to 3 cups.

In a large skillet, sauté shiitake mushrooms in oil for 10 minutes. Add stock, vegetables and remaining ingredients. Simmer 10 minutes.
