Tortellini with Herb Cream Sauce


Serves 4


1 lb fresh or frozen tortellini

1½ cup whipping cream

1 cup prepared tomato sauce

1½ Tbs fresh oregano, minced

1 tsp fresh thyme, minced

1 Tbs unsalted butter

½ cup Parmesan cheese, freshly grated


Prepare tortellini according to package directions; drain and keep hot.

Meanwhile, simmer cream in a heavy saucepan until reduced to one cup, about 15 minutes.

Mix in tomato sauce, oregano and thyme; bring to a boil.

Remove from heat and whisk in butter and cheese.

Pour over hot tortellini and toss gently.
