Westport Bar Cookies


Serves 10-12


4 eggs

1 cup granulated sugar

1 tsp vanilla

¼ cup vegetable oil

¼ cup fresh lemon verbena, finely chopped

¾ cup all-purpose flour

powdered sugar


Preheat oven to 375°.

Butter the bottom and sides of a 7" X 11" baking pan; dust with flour.

In a bowl, beat eggs and granulated sugar with an electric mixer on high speed for 5 minutes, or until almost tripled in volume.

Beat in vanilla, oil, lemon verbena and flour.

Pour into prepared pan and bake for 25 minutes or until center is set when tested with a wooden pick.

Set pan on a rack to cool completely.

When cool, sift powdered sugar over top and cut into rectangles 1-1/2" X 2".
